Chef Gand’s demo was for Peppermint Meringue Kisses, which eliminated the unsweetened cocoa and melted chocolate and substituted peppermint extract for the mint extract (and a few other alterations). Still, I think this recipe would work just as well and would make great gifts.

    …hey sounds delicious, but beating eggs is true terror to me, maybe I will make my husband pull out the Kitchenaid Mixer so the eggs turn into a yummy…..MERINGUE and not GLOP…hehehe thanks!

      That used to terrify me too, but I’ve become a bit braver. I even crack and pour the egg whites into one bowl (instead of cracking each one over a smaller bowl, adding the egg whites one at a time to the main egg white bowl) – for which I curse myself when yolk gets in on the last of several successful egg whites. Gale encouraged that as long as you are sure that your egg whites are yolk free, and that your bowl and beaters are clean, you should do well. Also, she suggested adding any ingredients the recipe calls for (such as cream of tartar or sugar) very slowly. If the recipe calls for powdered sugar to be added, she advised to do that last, as the powdered sugar can deflate the egg whites. Or, make hubby do it! 🙂
